Do you know what would cause a 2.5 Z3 idol to occasionally fall too low and stall?

Vacuum leak is my first guess, do you have a fault code scanner ?

Did you get any fault codes from it ?, Particularly those associated with fuel trims ...erratic idle, was a vac leak in mine, twice..

It sounds like a sticky idle control valve, which needs to be removed and cleaned with paraffin or similar. I have seen this problem on a couple of Golf GTi engines, which ise the same valve.
