I have a weighted gear knob that im cleaning up and before i re-fit i would like a new 5speed top cap, so gotta find one for sale first, but how do they come off or is it a screwdriver/ knife peel off approach?

The original emblems stick to the gear knob like hell. You can use a small screwdriver to pry them off from the side, but this will leave marks on the leather.
My method is to drill a small hole in the center of the emblem, insert a screwdriver there, and break the emblem apart. Worked fine for me so far.
